|peanut oil||2 Tbsps|
|scallion||4||cut into 2 inch pieces and shredded|
|red onion||1||halved & thinly sliced|
|chive||2 Tbsps||cut into 2 inch pieces|
|salt||1 1/2 tsps||to taste|
|pepper||1/4 tsp||to taste|
- In a bowl, whisk together the lime juice, and peanut oil.
- Add the garlic and cilantro. Leave to marinate for 1/2 hour.
- Just before serving add the scallion, red onion, and chives.
- Toss together and season to taste.
