|carrot||12||peeled and chopped|
|olive oil||3 Tbsps|
|kosher salt||1 1/2 tsps|
|black pepper||1/4 tsp|
|Italian parsley||1/4 cup||chopped|
- Preheat your oven to 400 degrees.
- Place the carrots on a baking sheet and drizzle the olive oil over the carrots.
- Sprinkle the carrots with salt and pepper.
- Using your hands mix the carrots well so they are completely coated.
- Place in the oven and roast for 20 minutes.
- Remove and sprinkle with the chopped Italian parsley. Serve.
