Zucchini, Tomato, & Corn Recipe. A quick, fresh, and delicious side dish for any meal.

Ingredients


olive oil 2 Tbsps
red onion 1/2 chopped
garlic clove 2 diced
zucchini 2 lbs ends trimmed & chopped
corn 3 using a knife slice the corn kernels from the cob
tomatoes - diced & peeled 1 lb
salt 1 tsp to taste
black pepper 1/2 tsp to taste
cilantro 1/4 cup chopped
cotija cheese 2 Tbsps to taste


Directions

  1. In a sauté pan heat the olive oil over high heat.
  2. Add the onion and sauté till translucent.
  3. Add the garlic, zucchini, and corn. Sauté for 2 minutes.
  4. Pour in the tomato and bring to a boil.
  5. Add the salt, pepper, and cilantro.
  6. Lower to a simmer, cover, and cook for an additional 5 minutes.
  7. Serve and garnish with cotija cheese.
