Blackened Cajun Salmon. Seared salmon encased in a cajun crust with moist delicous salmon in the center. You experience different layers of flavor with each bite, a little heat, moist, creamy salmon.

Ingredients


salmon fillet 4
cumin 1 Tbsp
coriander - dry 3 Tbsps
garlic salt 3 Tbsps
thyme (dried) 3 Tbsps
oregano (dried) 3 Tbsps
paprika 1/2 cup
cayenne pepper 1 1/2 tsps to taste
olive oil 1/2 cup


Directions

  1. Preheat oven to 325 degrees.
  2. In a bowl combine the cumin, coriander, garlic salt, thyme, oregano, cayenne pepper, and paprika. Mix well.
  3. Heat a cast iron skillet or oven proof sauté pan over high heat.
  4. Brush the salmon fillets with olive oil and dredge through spice mixture.
  5. Place in the skillet and fry on each side for 2 minutes.
  6. Remove the pan to the oven and roast for 3 to 5 minutes.
