Leftover Turkey? This is a great salad to make with leftover turkey. It has a great combination of sweet and savory flavors. And that all important crunch needed in every salad from the celery and apples.

Ingredients


turkey - cooked 2 lbs chopped
mayonnaise 1/2 cup
yogurt 1/3 cup
curry powder 1 2/3 Tbsps
lime 1 juiced
red onion 1/2 diced
celery stalk 2 diced
Granny Smith apple 1 peeled, cored, and chopped - drizzle with lime juice
dried cranberries 1/2 cup to taste
salt 1/2 tsp to taste
black pepper 1/4 tsp to taste


Directions

  1. In a bowl whisk together the mayonnaise, yogurt, and curry powder.
  2. Fold in the chopped turkey, red onion, celery, apple, and dried cranberries.
  3. Add salt and pepper to taste.
  4. Place in the refrigerator for 15 minutes before serving.
