Ingredients


Sauce
olive oil 2 Tbsps
yellow onion 1 chopped
garlic clove 2 crushed
tomato - chopped (canned) 2 lbs
red pepper flakes 1/4 tsp
salt 1 tsp
black pepper 1/4 tsp
Parmesan cheese 1 1/4 cups grated
Pasta
water 12 cups
salt 2 Tbsps
pasta 1 lb
arugula - baby 2 cups


Directions

  1. In a sauté pan heat the olive oil over medium heat.
  2. Add the yellow onion and garlic. Sauté until the onion is translucent.
  3. Add the tomatoes. Bring to a boil and lower to a simmer. Add the red pepper flakes, salt, and black pepper to taste. Simmer for 30 minutes uncovered.
  4. In a stockpot bring the water to a boil. Add the salt to the boiling water.
  5. Drop the pasta. After 2 minutes add the baby arugula.
  6. When the pasta is almost al dente remove the pasta and baby arugula from the water to the sauté pan. Increase the heat to high and cook for an additional 2 minutes.
  7. Add the grated Parmesan cheese. Stir well and remove to a platter to serve.
