Apple Pie Recipe. Nothing compares to a homemade apple pie. The smell of apples and cinnamon baking in a pie just gives you that fairytale feeling of home. This recipe is well worth the time as you will get a pie that tastes better than any pie you can buy.

Ingredients


Dough
all-purpose flour 2 1/4 cups
sugar 1 1/2 Tbsps
salt 1/2 tsp
vegetable shortening 1/2 cup frozen-cut into 1/4 inch cubes
unsalted butter 1/3 cup frozen - cut into 1/4 inch cubes
water 1/3 cup ice cold
egg yolk 1
cider vinegar 3/4 tsp
Apple Filling
Golden Delicious apple 5 lbs peeled, cored, and chopped
lemon juice 2 Tbsps
unsalted butter 1/2 cup
sugar 2/3 cup
all-purpose flour 3 Tbsps
cinnamon 1 tsp
Pie Crust Coating
heavy cream 2 tsps
sugar 1 tsp


Directions

  1. In a large mixing bowl combine the all purpose flour, salt, and sugar. Use a mixer to combine the ingredients.
  2. With the mixer on begin to add the frozen cubed vegetable shortening and butter. It should resemble little pellets of flour.
  3. Whisk together the ice cold water, egg yolk, and vinegar.
  4. Using a fork begin to mix the dry ingredients. Drizzle in small amounts of the liquid mixture and continue to mix. You will end up with a loose dough. Gather up the dough and wrap it in plastic wrap. Refrigerate for at least 1 hour.
  5. In a large frying pan melt the butter over medium heat. Add half the apples and half the sugar. Mix thoroughly and cook until the apples are tender - 5 to 10 minutes. Repeat with the rest of the apples and sugar. Allow the apple mixture to cool completely.
  6. Add the all purpose flour and cinnamon to the apples and mix thoroughly. Place a baking sheet in your oven and preheat it to 375 degrees.
  7. Remove the dough from the refrigerator and divide it. One larger than the other. Roll both out on a flour dusted surface to a thickness of 1/8 inch. Place the larger amount of the dough in the base of a 9 inch pie pan. Allow the crust to hang over the edge by 1 inch. Cut off the rest. Pour in the apple mixture and cover with the smaller amount of rolled out dough. Flute the edges of the dough together and cut out decorative figures out of the pie like shown above. Brush the heavy cream onto the pie and sprinkle on the sugar.
  8. Place the pie in the oven on a baking sheet and bake for 40 to 50 minutes until golden brown.


Notes

The secret to a flaky crust is the use of frozen butter and vegetable shortening. As you create the dough small pellets of butter and shortening will be found throughout the dough. When the pie is cooking the butter and shortening will melt creating little pockets of steam that will cause the dough to expand and create layers. These layers make your crust flakey and delicious. You must keep the dough cold so the butter and shortening do not melt prematurely.
